In the Spirit of the Bake Off, I have made some Mashed Potato Scones, and I made them Heart shaped. Well why not?
I didn’t follow a recipe as such, I just improvised. I had some mashed potato left over and wanted to make something with it.
To make mashed potato, I never add milk which I find makes it too runny. I add a tablespoon of butter and a good handful of grated cheddar cheese.
I had a cup and half of this mix left over to which I added some extra salt, some pepper and an egg.
I then gradually added self raising flour until the mixture became a sticky dough. I kneaded it on a floured board then rolled it into a ball and left it for an hour.
Then I flatted it, cut it into quarters and shaped each piece into a heart shape just less then an inch thick.

I then placed them on a baking tray, brushed them with milk and baked them in a medium to hot oven for 15 minutes.
Here is the result.
So not the traditional scones that we spread with jam, but a savoury one that tasted delicious spread with butter.
